The technique has been commonly used in Europe since the 1900s, but was “rediscovered” by the speciality coffee movement in recent years.
Pour over accentuates intricate flavours when compared to other brewing methods. This makes it a popular choice for single origin coffees, since it allows the flavours and aromas to shine.
Good filter coffee is clean, clear, and consistent. This is because the water is allowed to extract coffee oils and fragrances in its own consistent time and at its own pressure. The filter then catches a lot of oils, leading to a clean cup.
TCE's recipe is performed with a ratio of 16.8 of grinds to water. The whole process is executed over a period of 3 mins to bring about a maximum extraction power. The water is also set at about 88°C, so that we do not over extract the heated caffeine and bitterness.
