The unique cinnamon aroma when we tasted the beans is the deciding factor for us to include this into our “Exotic Series”. It challenges our usual cup of coffee and widens our coffee experience.
Grown by Jairo Arcila at Finca Villarazo, the Arcila family has been producing fair trade coffee for over 80 years. This coffee was picked and transported the same day to La Pradera, a processing centre that is also a place of research and development for processing coffee. This lot was exposed to a dry anaerobic fermentation of 48 hours. During this fermentation period, tartaric and cinnamon were added to the anaerobic environment. Later the coffee was placed on raised beds below 35 degree Celsius until moisture content was reached. The result is a high scoring coffee that will surely WOW whoever is lucky enough to taste it.
Pink Bourbon, it has nothing to do with alcohol. It is a rare and coveted hybrid of Red and Yellow Bourbon originates in Colombia. It is not easy to grow as it requires meticulous effort from the farmers to grow and harvest the beans. Pink Bourbon itself has substantial amount of sugar, hence creating a silkier body, and often giving Geisha-like qualities of floral and clean citrus notes.
