The Santa Rosa region has the perfect amount of rainfall when the coffee needs it to grow (1,600-2,000 mm/year). During the harvest, the region is very dry which gives the coffee a chance to ripen slowly on the tree and the farmers a chance to pick with little threat from the rain. The Ayarza sub-region is landmarked by the drastic landscape and cold blue water from the Laguna de Ayarza and Laguna Azul. The lake was formed by two massive volcanos that collapsed and formed a larger crater, containing all the minerals needed for coffee to grow and develop complexed flavours.
